Grilled Marinated Leg of Lamb

Ingredients

7 minced garlic cloves
1/4 cup olive oil
1/4 cup lemon juice    
1 Tbsp kosher salt    
1-1/2 tsp pepper
5-6 lbs boneless leg of lamb

Instructions

  1. Stir together the first 5 ingredients and rub all over the leg of lamb
  2. Truss lamb and marinate at least 3 hours in refrigerator
  3. Grill lamb over direct heat till nicely charred, then over indirect heat until internal temp reaches 125 - medium rare - about 50 minutes
  4. Let rest at least 15 minutes, slice thinly and serve with your favorite mint sauce
