Tangerine Tonic

There is some prep work on this beverage that needs to be done a couple hours before serving. Makes 4 - 16 ounce servings.
Ingredients
4 black tea bags
1 quart boiling water
1/2 cup raw honey
3 peeled slices of raw ginger
1 cup tangerine or blood orange juice
Instructions
- Two hours before serving, put honey and ginger slices in heat resistant microwave safe bowl; heat in microwave until honey boils. Carefully remove from the microwave using pot holders and set aside until cooled. Once cooled, remove and discard ginger.
- When ready to serve, heat one quart of water to boiling; add the 4 tea bags and remove from heat to steep. Let cool for 10 minutes. Fill 4 large glasses with crushed ice. Spoon 2 tablespoons of honey mixture into each glass. Take the tea bags out of the tea and discard. Stir in either tangerine or blood orange juice. Pour the tea/juice mixture over the honey and ice. Serve immediately.
Cook’s Note
I have also served this beverage "lightened up" by adding 1/2 cup of club soda to each glass. Just use a larger iced tea glass.
