Basil Preservation

"As the season ends how can we preserve the fresh basil we pick for multiple uses?"- Cindi Sutter
"I freeze it. Puree it with olive oil, garlic, and a little salt. Almost like a pesto but with no cheese, little nuts, and then it can be frozen in clumps/ice cube trays, popped into freezer bags, and cubes can be added to cold grain salads, pasta sauces, soups, wherever you want basil flavor. The olive oil and garlic usually are a nice addition to any of those items as well." - Laura Frerichs
