Pineapple-Apricot Cooler

Classic piña colada flavors of pineapple and coconut mingle with sweet apricot nectar in this light and juicy cooler.
Serves 4
Ingredients
2 cups ice cubes
1 (11-ounce) can apricot nectar, chilled
1/3 cup sour cream or plain yogurt
1/2 cup (4 ounces) unsweetened pineapple juice
3 Tbsp sugar
1/4 tsp coconut extract
1 (8-ounce) can crushed pineapple, undrained and chilled
Instructions
- Combine all the ingredients in a blender, cover with lid, and process until smooth.
