Favorite soups...for any season and reason....
by Sue Zelickson, Tastemaker in Residence
When asked what are my favorite soups?...It rings true that they range from hot to cold and season to season and time and place.
Summer: Gazpachos
Thick with freshly diced homegrown tomatoes, cucumbers, green onions, a dash of sea salt and freshly cracked pepper and my favorite seasoning, Lawry's Seasoned Salt.
Options: Add a jar of tomato juice or V8 or even bloody mary mix. Serve in bowls, cups or mugs with a dollop Hellman's or homemade mayo mixed with curry powder and garlic powder. Add a garnish of chopped avocado on top
Fall: Corn Chowder
Options: I often dump various cans of corn chowder in a pot then I add an extra can, or more, depending on my desired quantity. Another add-on is fresh or frozen corn if you have it. Season to taste with your favorite seasonings.
Winter: Chicken & Rice
Options: I pour it straight from the Campbells can, then I add cooked chicken, celery, carrots and your favorite seasonings.
Spring: Mushroom Soup
Options: My favorite choice is the thin version poured right from the Campbell's can, not thick, and simple.
