Spicy Curry and Treats Popcorn

The recipe below is a personal favorite. It is perfect for when I crave savory treats! It is a rift on a recipe I found a while back when I was searching for treats with a curry hot/sweet flavor. The base recipe is from the blog "Kitchen Treaty: Make Food, Not War"
Ingredients
2 Tbsp brown sugar
3 Tbsp coconut oil
3 Tbsp butter
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
1/4 tsp cayenne
1/4 tsp cinnamon
1/2 tsp ginger powder
1/2 tsp salt
2 Tbsp chopped pistachios
1/4 cup unsweetened coconut flakes, toasted
1/4 cup small diced apricots
6 cups popped popcorn
Instructions
- Set a small saucepan set over medium heat. Add the butter, oil, brown sugar, spices, and 1/2 teaspoon salt. Stir until combined. Bring just to a boil and remove from heat. Note: if your particular popping method or popper requires close supervision, save this step until after your popcorn is popped.
- Transfer popcorn to a large bowl. Drizzle butter and spice mixture over popcorn, pausing to toss occasionally until the popcorn is coated. Sprinkle pistachios, coconut flakes and diced apricots over top and toss gently. Allow to cool for a couple of minutes, then serve.
