Honey Roasted Carrots with Lavender

Ingredients

8 to 10 medium local carrots, sliced in half lengthwise

1 Tablespoon olive oil

Salt

2 Tablespoon honey from Ames Farm or Nistler Farms

1 heaping teaspoon herbs de provence or culinary lavender buds from French Nugget

Fresh lemon juice

Instructions

  1. Preheat oven to 400. Toss carrots with olive oil and salt and spread out on a baking sheet. Roast for 12 minutes. Remove the pan from the oven, drizzle carrots with honey and sprinkle with herbs or lavender buds.

  2. Return to the oven and roast until caramelized, about 5 to 10 minutes, stirring once or twice. Drizzle carrots with lemon juice to taste before serving.
