Fall-tastic Food: Pumpkin

“Mom, what’s your favorite thing about fall?” asked my inquisitive 11 year old daughter. It’s tough to narrow down as the season brings a bounty of great food and weather. Ultimately, after mulling it around for some time, my answer was simple…pumpkins!
I love going to pick them, making jack-o-lanterns masterpieces, and cooking with this versatile squash. Today I share some kid friendly pumpkin recipes that are wonderful to eat yourself or give as a gift. The Pumpkin Butter is high in vitamin A and low in fat. It also is allergy friendly as it contains no dairy, nuts, or wheat!
