Chocolate Chip Cookie Pizza

A spirited, creative solution to celebrate cookie and pizza month.
Why not put the two of them together?

In the early nineties there was a pizza restaurant chain started by Minneapolitan, John Goodman. It was called Sidney's, named after his father. Their thin crust pizzas were perfection. However, my most favorite was the chocolate chip cookie pizza.

Just imagine a huge chocolate chip cookie baked on a pizza pan and served warm with ice cream and/or whipping cream topped with a drizzle of hot fudge sauce, if you liked. Absolutely delicious.

Baking one at home isn't that hard. Here is a recipe to celebrate October's cookie and pizza month.

Ingredients
1 cup butter, softened
3/4 cup white sugar
3/4 cup light brown sugar (packed)
1 tsp vanilla extract
2 eggs  
2 1/4 cups all purpose flour
1 tsp salt
1 tsp baking soda
2 cups semisweet chocolate chips
1 cup chopped walnuts (optional)

Instructions

  1. In a large mixer master bowl, beat butter, sugars and vanilla until light and fluffy. Add eggs one at a time, beating well.

  2. Gradually add flour, salt and baking soda, beating until well blended. Stir in chocolate chips and nuts.

  3. Grease a 14 inch foil covered round pizza pan with soft butter. Bake at 375° for 20-25 minutes. Cool on a cooling rack.

  4. Serve plain or topped with ice cream or whipping cream and drizzled with fudge sauce.
