Baked Winter Squash - Root Vegetables

Butternut, Kabucha, Acorn, Buttercup, Delicato, Sweet Dumpling  and many other types all work well . Parsnips, rutabagas, turnips, onions and carrots all work well in this preparation.

The Glaze

Ingredients
1 Tbsp Sunflower Oil
1 Tbsp Maple Syrup
1 Tbsp Soy Sauce

Instructions

  1. This is the basic recipe, depending on how much you are doing you can double or triple the recipe. 
  2. Whisk together in a bowl with a fork and brush onto the washed and cleaned squash that is cut into one inch thick slices. You can leave the skin on many squash, the skin is often good to eat!
  3. Bake at 375 until tender, approximately 45 minutes.
