Grill 'laxin

Memorial Day weekend! Ahhhh the “official” start of summer for Minnesotans. We can actually take off our parkas (usually) and park it on the shores of our 10,000+ lakes. For this mama it also means I “officially” relinquish many of my standard cooking duties. The grill comes out and so does my husband’s inner chef. With the sun shining and the deck chairs beckoning, it’s time to “Grill ‘lax”?

How does one Grill ‘lax? With the everyday easy grill pack (and maybe a cold one in hand). The Grill Pack is a customizable bunch of veggies, proteins, and herb/spices in foil and with the BBQ doing the rest.

My friend Heather Willier (creative food guru) has a fantastic sweet potato fry recipe that easily modifies into a grill pack. Make it as is, or use “plan overs” for a next day easy lunch.  Once zipped up you can bring to the lake, neighbors for a cookout, or for a fast meal before the crazy train of kiddo sporting events.
