Slow Cooker Pumpkin Black Bean Chili

Ingredients

1 cup chopped onions
1 cup chopped yellow bell pepper
3 garlic cloves, minced
1-1/2 tsp dried oregano
1-1/2 to 2 tsp ground cumin
2 tsp chili powder
1 can (14 to 16 oz) black beans, rinsed and drained
1-1/2 cups chopped cooked turkey or chicken
2 cups (14 to 16 oz) canned unsweetened pumpkin puree
1 can (14 to 15 ounces) diced tomatoes
2-1/2 cups chicken broth

Instructions

  1. Put all the ingredients into your slow cooker. (I used my 4-Quart.)
  2. Stir to combine.
  3. Cover and cook on LOW 6 to 8 hours
