Baked Banana Peanut Butter Oatmeal

Celebrate National Nutrition Month this March with a Baked Banana Peanut Butter Oatmeal
Serves 6
Ingredients
2 cups rolled oats
1 Tbsp cinnamon
1 cup almond milk (I used Almond Breeze Vanilla)
1 egg
3 bananas
4 Tbsp peanut butter (you can substitute PB2 for a lower calorie dish)
1 tsp baking powder
Instructions
- Preheat oven to 375 degrees
- Grease 8 x 8 baking dish
- Mix dry ingredients together in a bowl and set aside
- Mash 2 of the 3 bananas in a bowl and combine with egg, almond milk, and peanut butter
- Fold dry ingredients into banana, egg, almond milk and peanut butter mix
- Stir together all ingredients and pour into greased baking dish
- Slice the remaining banana and place on top of the mix in the baking dish
- Drizzle peanut butter on top, bake for 25 minutes, and enjoy!
