French Silk Pie

“My 6-year-old granddaughter absolutely loves this pie! She just calls it “chocolate pie”.😋 It is an easy “do ahead” recipe as it needs to be in the fridge for several hours. And also all the easier because I have discovered using a Keebler Ready Crust Graham pie crust is so handy! It also allows my granddaughter to bring the leftover pie home with her as you are buying the graham crust already in a disposable pie pan!”

Ingredients

Crust

1 graham pie crust (such as Keebler Ready Crust)

Filling

4 oz bittersweet chocolate (such as Ghirardelli 60% cacao)

3/4 cup butter, room temperature

1 cup sugar

2 tsp vanilla

4 eggs, pasteurized

Garnish

whipped cream, sweetened

chocolate curls, optional

Instructions

  1. Melt chocolate in microwave-safe bowl, let cool slightly

  2. Beat butter until fluffy. Add sugar and beat until fluffy.

  3. Mix in cooled chocolate and vanilla and beat until mixed.

  4. Add eggs one at a time, beating well after each addition.

  5. Pour filling into pie crust and refrigerate at least 2 hours. Can be made ahead of time.

  6. Serve with sweetened whipped cream and decorate with chocolate curls.

Cook’s Note- Important to use pasteurized eggs and may substitute liquid pasteurized eggs equivalent to 4 eggs.
