Egg Frittata

This recipe doesn’t call for potatoes, but you can always slice some small white new potatoes and add them to the mix.
Ingredients
6 eggs
1 cup milk
1 green onion chopped finely
2 Tbsp butter melted
1/2 t salt
1/8 t pepper
1/2 cup shredded cheddar cheese
4-6 strips of bacon
Instructions
Preheat oven to 400°
In a mixing bowl whisk eggs, milk, onion, butter, salt & pepper until blended. Pour into a 10 1/2 round pan or 9x9 pan, not full because it will rise. Sprinkle cheese and bacon over the top. Bake for 20 minutes or until golden brown. You can double the recipe and pour into 2 pans.
