Mint Brownies

Ingredients

3 sticks softened butter

1 cup granulated sugar

2 cups powdered sugar

4 eggs

1 (16 oz) can Hershey syrup

1 cup plus 1 Tablespoon flour

2 cups chocolate chips

1 teaspoon vanilla

½ teaspoon baking powder

½ teaspoon pure peppermint flavoring

3 teaspoons crème de menthe

3 teaspoons whole milk

Instructions

  1. Preheat oven to 350 degrees.  Grease and flour 13 X 18 jelly roll pan.

  2. Mix 1 stick soft butter and 1 cup granulated sugar together with a mixer.

  3. Add 4 eggs, 1 teaspoon vanilla, and 1 (16 oz) can Hershey syrup and mix well.

  4. Add 1 cup plus 1 tablespoon flour and ½ teaspoon baking powder and mix well.

  5. Pour mixture into greased and floured jelly roll pan and bake at 350 degrees for 20-24 minutes.

  6. Cool brownies…then ice with:

Frosting

  1. Mix the following with mixer until smooth: 2 cups powdered sugar, 1 stick soft butter, ½ teaspoon pure peppermint flavoring, 3 teaspoons crème de menthe, 3 teaspoons milk.

  2. Add a few more dribbles of milk if it seems to thick or sticky.  

  3. Once frosting is on brownies, place in refrigerator for 1-2 hours before you add the chocolate layer on top.  (This prevents the mint layer from melting when you frost them). Then ice with:

Chocolate Layer for Top

  1. Melt together 2 cups chocolate chips and 1 stick butter.  Once melted, spread on top of green frosting layer.
