New Year’s Good Luck Bean Salad

Ingredients
1 can S&W 50% reduced sodium Black Beans
1 can S&W Kidney Beans
1 can Black Eyed Peas
1 red and/or green bell pepper, diced
½ cup chopped cilantro
3-4 chopped green onions
Dressing - Ingredients
¼ cup red wine vinegar or sherry vinegar
1 garlic clove, minced
Salt and freshly ground pepper to taste
2 tsp lightly toasted cumin, ground
1 tsp Dijon mustard
½ cup veggie broth
⅓ cup extra virgin olive oil
Instructions
- Whisk together all the ingredients for the dressing. Set aside.
- Stir together all the beans, peppers, and onions.
- Combine both the mixture and dressing together.
- Top or combine cilantro in. Serve as a dip with tortilla chips, or on top of a green salad.
